Stark Thirst sources best-quality grapes from a unique hillside site in Alexander Valley within Sonoma County. The site is at 450 feet in elevation which is an elevation usually reserved for more expensive Cabernet Sauvignon grapes. Chardonnay is primarily grown on flat valley floors. Proud to say – not this one!
Sonoma has cool, foggy mornings and sunny, warm afternoons to slowly ripen the grapes so flavor and acid stay balanced.
Winemaker Christian Stark monitors the grapes as they grow to ensure they are picked at just the right point of ripeness. When he says ‘go’, the grapes are harvested and crushed on the same day to ensure freshness.
Stark Thirst is fermented in stainless steel tanks until it is considered ‘dry’ (not sweet). Then, the wine is matured in the tank and bottled within 3-4 months to ensure freshness.
Stark Thirst is bottled in recycled glass bottles remade in the USA. These bottles are 33% lighter than average bottles for a smaller environmental footprint.
Good news, aluminum screw caps are recyclable.
Stark Thirst sources its grapes (meaning we contract with like-minded growers). We seek vineyards that are committed to sustainable and organic practices. We aim to secure long-term growing contracts where we can influence growing techniques and water usage.
